Megan’s Real Food Chocolate Chip Cookie Dough Balls

We have had the opportunity to serve some pretty fantastic families in the  short time we’ve been open! This past weekend, one of those families made a delicious treat for us that we shared via our Facebook page, and we have had many inquires for the recipe! As awesome chiropractic patients go, Megan happily shared the recipe with us so that we could share it with you all! Staunton Chiropractor's Cookie Dough BallsIngredients:

  • 2/3 cup cashews
  • 1/2 cup + 1 tbsp regular oats
  • 3/4 cup brown rice flour (or other flour)
  • 1 tsp kosher salt
  • 7 pitted medjool dates, chopped
  • 1 tsp pure vanilla extract
  • 3-5 tbsp pure maple syrup, to taste (Megan uses less, so really taste as you go!)
  • 3-4 tbsp dark chocolate, chopped (or check out these gluten/nut/soy/dairy-free vegan chocolate chips at your local health food store)

Directions:

Line a baking sheet with parchment paper or a non stick mat. In a food processor, process the cashews and oats until a fine crumble.

Add in the flour, kosher salt, and roughly chopped pitted medjool dates. Process until fine.

Add in the vanilla and pure maple syrup and process until the mixture comes together in a ball.

Transfer to a large bowl and stir in the 3-4 tbsp of chopped dark chocolate. Roll into balls and freeze for 1hr to set.

Makes approximately 25 balls (but Megan triples this recipe when she makes it!)
